Compounds for which odour detection threshold data were available are shown in Table 2. Olfactory detection thresholds from Nagata (2003) were used as they were measured using the same methodology and panels. However, DMTS was added as it is known to be sensorially important and was not reported by Nagata (2003). The OAVs for the emissions reported in Table 2 were calculated using the average concentration for each day of storage. Compounds for which the concentration exceeded the olfactory detection thresholds (OAV > 1) are shown in Figure 2.
