Abstract

The objective of this study was to evaluate the extent of inhibition of yeast growth and alcohol biosynthesis when spent sulfite liquor (SSL) was incorporated into growth media.

The liquor was pretreated by boiling, steam stripping or aeration in order to eliminate the factors causing growth inhibition. While these treatments did reduce the growth inhibiting effects of SSL, complete elimination of inhibition was not possible.
